Instructions
Step 1: Cook the Rice

Boil 4 cups water in a pot, add spices (bay leaf, cloves, cinnamon, cardamom), salt, and rice.

Cook until 70% done (grains should be firm but not fully soft).

Drain the water and keep the rice aside.
Step 2: Prepare the Biryani Masala

Heat ghee/oil in a large pan.

Add cumin, bay leaf, cardamoms, cinnamon, and star anise; sauté until fragrant.

Add sliced onions and fry until golden brown.

Stir in ginger-garlic paste and sauté for 30 seconds.

Add tomatoes, cook until soft.
