Veg Biryani Recipe (Aromatic & Flavorful One-Pot Dish)

Ingredients (Serves 3-4)

For Rice

  • 1 cup basmati rice (soaked for 30 minutes & drained)

  • 4 cups water

  • 1 bay leaf

  • 2 cloves

  • 1-inch cinnamon stick

  • 2 green cardamoms

  • ½ tsp salt

For Biryani Masala (Gravy)

  • 2 tbsp ghee or oil (for richness)

  • 1 tsp cumin seeds (jeera)

  • 1 bay leaf

  • 2 green cardamoms

  • 1-inch cinnamon stick

  • 1 star anise (optional)

  • 1 medium onion, thinly sliced

  • 1 tsp ginger-garlic paste

  • 1 medium tomato, finely chopped

  • ¼ cup curd (yogurt)

  • ½ tsp turmeric powder

  • ½ tsp red chili powder (adjust to taste)

  • 1 tsp garam masala or biryani masala

  • ½ tsp coriander powder

  • Salt to taste

For Vegetables

  • ½ cup chopped carrots

  • ½ cup chopped beans

  • ½ cup green peas

  • ½ cup cauliflower florets

  • 2 tbsp chopped coriander leaves

  • 2 tbsp chopped mint leaves (optional, for freshness)

For Layering & Garnish

  • 2 tbsp fried onions (optional, for extra flavor)

  • 2 tbsp warm milk + ¼ tsp saffron (optional, for rich aroma & color)


Instructions

Step 1: Cook the Rice

  1. Boil 4 cups water in a pot, add spices (bay leaf, cloves, cinnamon, cardamom), salt, and rice.

  2. Cook until 70% done (grains should be firm but not fully soft).

  3. Drain the water and keep the rice aside.


Step 2: Prepare the Biryani Masala

  1. Heat ghee/oil in a large pan.

  2. Add cumin, bay leaf, cardamoms, cinnamon, and star anise; sauté until fragrant.

  3. Add sliced onions and fry until golden brown.

  4. Stir in ginger-garlic paste and sauté for 30 seconds.

  5. Add tomatoes, cook until soft.

  6. Mix in curd, turmeric, red chili powder, garam masala, coriander powder, and salt.

  7. Add chopped vegetables and cook for 5 minutes, stirring occasionally.


Step 3: Layering the Biryani

  1. In the same pan, spread half of the cooked rice over the vegetable masala.

  2. Sprinkle chopped coriander, mint, fried onions, and saffron milk.

  3. Add the remaining rice and repeat the garnish.

  4. Cover tightly and cook on low flame for 10-12 minutes (Dum Cooking Method).


Step 4: Serving

✔ Fluff the biryani gently with a fork.
